Ilonggo Eats offers a diverse selection of dishes that not only delights the palate but also reflects the rich culinary heritage of the region. Patpat’s Kansi, a specialty from Iloilo, is a comforting beef soup made with tender beef shank and bone marrow, simmered in a tangy broth flavored with batuan fruit. This local souring agent gives the dish its distinctive sour taste. Ted’s Oldtimer La Paz Batchoy, another local favorite, is a noodle soup originating from the La Paz district of Iloilo City. It is crafted from fresh egg noodles, pork offal, crushed pork cracklings, and a flavorful broth, often topped with garlic and scallions—an old-time recipe handed down and refined through generations.

Guests can also savor Aida’s Chicken Inasal, Bacolod’s famous grilled chicken marinated in vinegar, calamansi, garlic, and annatto oil, then charcoal-grilled to impart a smoky, savory, and juicy flavor that has become synonymous with Bacolod’s vibrant food scene. For dessert, the Crispy Piayita offers a sweet, flaky pastry filled with muscovado sugar, a specialty that showcases the Ilonggo tradition of crafting simple yet memorable treats using local ingredients and time-honored techniques.

The buffet spread will be available on 20 and 27 September (Saturdays) for both lunch and dinner, from 12:00 PM to 3:00 PM and 6:00 PM to 10:00 PM, and on 21 and 28 September (Sundays) for lunch, from 12:00 PM to 3:00 PM, at P1,780 per person.
